I'm always posed the question of why? Health reasons or cruelty to animals?
I used to say health, but now it's a clear both. Adding on environmental.
If as humans we don't need to eat meat or animal products to be healthy and eat a properly balanced diet, why do we?
I eat what makes me feel happy and healthy. That doesn't involve any animal based products or heavily processed foods like flour and sugar.
With rough estimations, my diet consists of:
65% Whole grains and starchy vegetables
20% green leafy vegetables and legumes
10-15% fruit, dried and fresh
5-10% Nuts and seeds
1-2% healthy oils.
Keep in mind I am no nutritionist, or diet coach of any kind! This is the diet that I have found works for me right now. Sometimes the portions change depending on weather, mood, and availability. The one thing that remains pretty consistent is my amounts of green vegetables. They are essential in a vegan diet! They are your main source of calcium and iron as well as giving your body a surge of other essential vitamins and nutrients, like: vitamin C, magnesium, dietary fiber, protein, vitamin K and others.
