"Cheesy" Broccoli
Approx. 2 cups of organic broccoli lightly streamed or raw, your preference. I like mine lightly steamed, because it soaks in the “cheese” better! This recipe works great if you swap out the broccoli for brussel sproats or any other lovely green veggie you want to eat covered in “cheesy” goodness. Kale, collard greens, dandelion greens, fiddle-heads... Oh my I love vegetables!
2 Tbsp Melted Red palm oil or preferred healthy oil. I use the red stuff for added colour.
3 Tbsp Nutritional yeast
Mix together until yeast is beginning to break down. Then all in your favorite vegan milk until you reach the perfect creamy consistency. Pour over broccoli and try not to eat it too fast!
I haven’t experimented with it yet, but I just picked up my food processor from my old house, and want swap out a little of the nutritional yeast with soaked and ground up cashews. I will let you know how that turns out!
